1-Pot Creamy Chicken and Mushroom Pasta
1-pot creamy chicken and mushroom pasta is a great busy weeknight meal! I feel like I’m having a hard time making and posting super Christmas-y recipes. But then I thought, maybe you could use a quick 30 minute meal to help you on a busy day! My almost 2-year-old ate THREE whole bowls of this. And my 4-year-old told me she wanted to eat this every day because it’s so good. So, this recipe is kid approved. At least by my kids.

Super delicious and full of flavor pasta dish with mushrooms, cherry tomatoes, spinach, and garlic. Only dirties 1 pot and is ready within 30 minutes!

Ingredients
1-pound chicken breasts, cut into 1-inch pieces
1 tablespoon butter
1 tablespoon olive oil
2–3 cloves garlic minced
1/2 cup cherry tomatoes, halved
4 oz mushrooms sliced
1 1/2 tablespoon flour
2 cups chicken broth
3/4 cup cream
3/4 cup milk
1 teaspoon salt
1/4 teaspoon pepper
8 oz dry pasta, (bow tie, rigatoni, fusili, etc)
1/3 cup grated Parmesan cheese
2 cups fresh spinach
Instructions
In a 4-quart pot, heat the butter and olive oil over medium high heat. Add the chicken and cook till chicken is no longer pink.
Add the garlic, halved tomatoes, and mushrooms and heat till tender. Sprinkle the flour over and stir another minute. Slowly add the broth, cream, milk, and salt and pepper. Add the pasta.
Once the pasta is in, cover pot till it reaches a simmer. Reduce heat to low-medium low to maintain a gentle simmer. Continue cooking covered. When pasta is cooked through, remove from heat and add the Parmesan and spinach. Stir till combined and let sit for 5 minutes. Stir one last time and serve.
