BBQ Chicken Sandwiches

When we were in Munich over New Year’s we ate at the Hard Rock café and my husband got a BBQ pork sandwich that had green apple and coleslaw on it. It was delicious and I wanted to try to recreate the sandwich. Make it with this BBQ Sauce and this Coleslaw if desired.

BBQ Chicken Sandwiches

A take on a sandwich my husband ate at the Hard Rock Cafe in Munich, Germany. Delicious BBQ Chicken with coleslaw and thinly sliced green apples.

Ingredients

1 ¾2 pounds chicken breasts

3 tablespoons butter

1 cup barbecue sauce (like this BBQ Sauce)

Salt and pepper

6 buns

Coleslaw and thinly sliced green apple, if desired.

Instructions

Pat chicken dry with paper towel and then lightly season both sides with salt and pepper.

In a large pan or pot melt butter over medium high heat and then carefully place chicken in an even layer. Cook each side till lightly browned and then flip over and repeat with second side. Reduce heat to medium low and pour barbecue sauce over chicken. Flip chicken frequently. Gently simmer till chicken is cooked through, about 10 minutes, depending on how thick your chicken breasts are. Remove pan from heat and move chicken to foil lined plate and tent with foil and let rest for 5-10 minutes before shredding. Shred chicken into bite-sized pieces and return to barbecue sauce. Return to medium heat and stir till sauce and chicken are warmed through.

Serve on a bun and top with thinly sliced green apples and coleslaw, if desired.

Notes

Don’t shred your chicken immediately after taking off of heat or it’ll dry out really fast. Resting the chicken allows the chicken to stay moist after being shredded.
