Super Easy & Fast “Pink Sauce” Enchiladas

I wanted to be helpful for you in finding the perfect recipe(s) to make for Cinco de Mayo next week so that’s why I created this recipe roundup for you! All my favorite Mexican inspired recipes on my blog in one place.

This past week I posted this copycat recipe for Cafe Rio dressing. It’s my favorite taco salad dressing, delicious smothered on a burrito or in a taco, or as a dip for a taquito or any other kind of Mexican food you can think of.

These are my favorite enchiladas in the whole world– Pink sauce enchiladas. There is very little effort needed to make these and don’t even require enchilada sauce. They’re creamy, perfectly seasoned, and are just perfect for a nice and warm home-baked meal.

You can’t really have a good Cinco de Mayo without the perfect handmade tortillas. I’ve made approximately 1,000 tortillas from this recipe and I can tell you they are so soft and delicious and I could eat 10 in 1 meal.

 

These chili lime chicken and sweet potato tacos are so good! They’re popping with different flavors and textures and are pretty easy to make too.

 

Southwest quesadillas are a take on the Chili’s appetizer for southwest egg rolls but way easier to make and honestly just as delicious! The avocado dip that goes with them is so good you may want to double it!

 

Lemon Lime Chicken taco marinade is a recipe we make no less than 1 time a month in my home. It’s an epic marinade and perfect fro a low effort but delicious end result.

 

Navajo fry bread tacos are always a good choice and really great if you want to make your cinco de mayo a little bit fancier.

 

Sometimes you just need some delicious pico de gallo for your tacos and this recipe is a really great classic one.

 

Also, sometimes you just need some delicious guacamole. If you don’t want to make a fuss over cinco de mayo, make some guac and just have chips and guac for dinner! I don’t see anyone complaining about that. Melt some cheese on those tortilla chips and it’s a meal, right??

 

If you have a really busy day next week and want a dump and go crockpot meal then try my favorite taco soup! This is another recipe that’s made monthly in my home. Lots of leftovers and great for a busy day.

 

Okay, now onto the best part of a meal, the dessert of course! If you haven’t tried my original tres leches cake I would highly recommend it for dessert on Cinco de Mayo.

 

I love tres leches cake so much that I’ve made 2 other flavors of it! The first one is a chocolate tres leches cake. Also just so good. You can’t go wrong with chocolate and tres leches combined.
