Fresh Berry Cobbler Bars
I’ve been kind of MIA the past few weeks but wanted to post this fresh berry cobbler bars recipe in case any of you are looking for a good 4th of July dessert this weekend. It’s really delicious, not too complicated to make, serves a lot of people, uses delicious summer berries that are in season, and can be served as either a cobbler or in bar form. Delicious fresh Berry Cobbler Bars can be served as either a cobbler if eaten hot out of the oven, or cut into bars after they’ve cooled and set.

Ingredients
Berry Center-
3 cups blueberries, divided
2 ½ cups chopped strawberries
1 tablespoon lemon juice
½ cup sugar
2 tablespoons plus 1 teaspoon cornstarch
1 tablespoon butter
1 teaspoon vanilla extract
Crumble layers-
3 ¼ cup flour
¾ cup sugar
¼ packed brown sugar
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon cornstarch
1 cup cold butter, cut into ½ tablespoon pieces
2 large egg yolks
1 teaspoon vanilla extract
Instructions
Preheat oven to 350 F and grease a 9×13 baking dish.
Berry Center-
In a saucepan combine 2 cups of the blueberries, strawberries, lemon juice, sugar, and cornstarch. Turn heat to medium low and stir frequently till blueberries and strawberries have lost lots of their water and the mixture is really wet, about 6 minutes. Increase heat to medium and bring to a simmer. Stirring constantly, let mixture simmer for 2 minutes. Remove from heat and stir in remaining 1 cup blueberries, butter, and vanilla till butter is melted and combined. Let sit and cool a bit while you make the crumble layers
Crumble layers-
Combine the flour, sugar, brown sugar, baking powder, salt, and cornstarch. Add the butter and using a pastry blender, cut the butter in till the butter is about the size of a small pea. Add the egg yolks and vanilla extract and continue using the pastry blender to blend till the mixture is combined. It will start to somewhat form a dough but will still be crumbly.
Assembly-
Press roughly 1/2 -2/3 the crumble mixture into a greased 9×13 baking dish with your hand till it is formed into an even flat layer. Pour the berry layer next and smooth till even. Sprinkle the remaining crumble layer over the berry layer and place in oven.
Bake for 45-55 minutes till topping is golden brown.
Notes
Serve fresh out of oven if you want it to crumble and be like a cobbler or let cool completely and cut into squares to serve bar form.
