Fudge
This fudge is a take on a family fudge recipe but tweaked to make it possible to work with ingredients I can find readily in Finland. When we move back to America I will make and post the original recipe too. They are both delicious and both should be enjoyed! I love fudge so much.

Smooth, creamy and delicious fudge in about 15-20 minutes.

Ingredients
2 tbsp butter
18 oz medium to dark chocolate, chopped or broken into pieces (good quality chocolate bars or chocolate chips)
6 oz marshmallows (~25 normal sized marshmallows or about 4 ½ cups mini marshmallows)
1 can sweetened condensed milk
1/8 tsp salt
2 teaspoons vanilla extract (or mint if you want mint chocolate fudge!)
Instructions
Line a 9×9 or 10×10 baking dish with parchment paper and set aside.
In a medium or large sauce pan melt the butter over medium heat.
Lower heat to medium low and add the chocolate, marshmallows, sweetened condensed milk and salt.
Stir constantly till marshmallows and chocolate are totally melted and mixture is smooth. It will take about 10 minutes for this to happen. Make sure you scrape the bottom of the pan as you mix so the bottom doesn’t burn. It may look pretty terrible for a while, but keep mixing till it becomes smooth.
Add the vanilla in and stir to combine.
Pour into prepared pan with a spoon try to get the top smooth and even. Refrigerate till set up. Cut into small squares and enjoy.
Store in an airtight container in the fridge or on the counter.
