Super easy and from scratch enchilada sauce that tastes way better than the canned version you can buy at the store.
3 tablespoons olive oil
2 tablespoons flour
4 cups chicken broth
1/4 chili powder
1 teaspoon onion powder
10 oz tomato paste
1 teaspoon oregano
2 teaspoons salt
In a sauce pan, heat the oil over medium heat. Add the flour and whisk for a minute. Add the chicken broth while whisking followed by the remaining ingredients. Simmer for about 5-10 minutes then it’s ready to use. Refrigerate if not using right away.
Makes about 42 oz
If you don’t need all of it for one dish, freeze the remaining and thaw when ready to use again.
