Perfectly roasted carrots in a delicious honey dill glaze.
2 pounds baby carrots, or large carrots peeled and cut into 1–2 inch pieces.
1/3 cup butter
3 tablespoons honey
¼ teaspoon salt
Pinch of black pepper
1 tsp dry dill
Preheat oven to 425 F.
Melt butter in pan with honey over medium heat.
Add the salt, pepper, dill and carrots and stir to combine.
Cook for about 3-4 minutes and transfer to a foil lined baking sheet.
Bake for 20 minutes, or until tender, stirring about halfway through the bake time.
Remove from oven and allow to cool for 5-10 minutes before eating.
