Strawberry Butter

Ingredients

  • 2/3 cup strawberries, chopped small (about 67 strawberries)
  • 1 cup salted butter, softened*see note
  • ½ cup powdered sugar *see note

Instructions

  1. Mash the strawberries in a bowl with a fork to release the juice and have them really smashed, but still have some small chunks.  You could also do this in a food processor.
  2. Whip the softened butter and powdered sugar in a mixing bowl with a hand mixer for 3-4 minutes until super light and fluffy.
  3. Add the strawberry puree and juice to the butter mixture.
  4. Mix until well combined. Serve and enjoy!

Notes

    • Use ripe, fresh strawberries. If they’re overripe they will water down the butter.

    • Let the butter come to room temperature. You can check if it’s ready by touching it and see if you indent it, but it must not be greasy.

    • Are you team smooth or team strawberry bits? If you like it smooth, use a food processor, and if you want pops of strawberry, then use a fork.
