2/3 cup strawberries, chopped small (about 6–7 strawberries)
1 cup salted butter, softened*see note
½ cup powdered sugar *see note
Instructions
Mash the strawberries in a bowl with a fork to release the juice and have them really smashed, but still have some small chunks. You could also do this in a food processor.
Whip the softened butter and powdered sugar in a mixing bowl with a hand mixer for 3-4 minutes until super light and fluffy.
Add the strawberry puree and juice to the butter mixture.
Mix until well combined. Serve and enjoy!
Notes
Use ripe, fresh strawberries. If they’re overripe they will water down the butter.
Let the butter come to room temperature. You can check if it’s ready by touching it and see if you indent it, but it must not be greasy.
Are you team smooth or team strawberry bits? If you like it smooth, use a food processor, and if you want pops of strawberry, then use a fork.
