Sweet potato casserole in a mashed potato form
2/3 cup of butter
2/3 cup of water
5 pounds sweet potatoes, peeled, cut in half long ways and then sliced into ~1/8 inch slices
2 teaspoons salt
1/4 cup pure maple syrup
½ cup marshmallow fluff
1/2 teaspoon cinnamon
In a soup pot, melt butter over medium heat and then add water, sweet potatoes, and salt. Cover with lid and simmer over medium to medium low heat for about 20-25 minutes, stirring every 4-5 minutes. When the sweet potatoes are easy to mash with the spoon you’re stirring them with, remove from heat and pour in the maple syrup, marshmallow fluff and cinnamon. Using a hand mixer, mix potatoes till smooth. Serve warm.
