Roasted Fingerling Potatoes
If you’ve been following my blog for a while, you know I love roasted veggies. These are also delicious. You’re going to love pairing these with basically any protein and your kids will eat them too! Who doesn’t love tiny baby potatoes?

Cute little roasted potatoes that everyone will love to eat and that pair great with almost any main dish.

Ingredients
1 ½ pounds fingerling potatoes
3–4 cloves garlic finely minced
2 tablespoons melted butter
2 tablespoons olive oil
½ tsp salt
¼ teaspoon pepper
½ teaspoon herbs de Provence
Light squeeze lemon juice
Instructions
Preheat oven to 400F. Prepare a rimmed baking sheet with foil and lightly spray with cooking spray. Wash and scrub potatoes and put in a medium bowl. Pour remaining ingredients over potatoes and toss to combine. Pour onto prepared baking sheet and bake for 25-30 minutes, depending on potato size, till fork tender.
