Secret ingredient no-bake cookies that will set up perfectly every time without being dry and crumbly.
1/2 cup butter (113 g) (salted or add a bit of salt in if using unsalted)
1/4 cup cocoa powder (25g)
1/2 cup milk (at least 2% for best results)
1 cup white sugar (200g)
1 cup light or dark brown sugar (200g)
2/3 cup peanut butter (165 g) (not all natural where the oil separates from the rest)
2 teaspoons vanilla extract
3 cups old fashioned oats (285 g) (can use quick oats too but will result in a softer less chewy cookie)
Set a few sheets of parchment paper on the counter and set aside.
Heat first 5 ingredients on medium low heat till butter is all melted. Don’t rush or you risk not having your cookies set up perfectly. Once everything is melted and combined, turn heat to medium and stirring constantly, bring to a boil. Once it starts to boil, set timer for 1 minute (set a timer). Remove from heat and add the peanut butter, and vanilla and stir till well combined. Add the oats and stir till combined. Spoon the mixture onto the parchment paper in about 2 tablespoon sized drops. Let cool at room temperature till set up.
Use normal peanut butter that doesn’t separate.
Set a timer for 1 minute once it starts boiling so you don’t under or over boil.
