Super simple yet really delicious. Quick and easy side dish to anything you are making for dinner.
2 pounds carrots, peeled
3 tablespoons olive oil
1/4 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Pre heat oven to 425 F.
Cut carrots either in sticks (cutting each carrot in half, then each half into 4 pieces the long way), or about 1/3 inch rounds.
Toss the carrots, olive oil, and seasonings together in a large bowl. Evenly spread on a baking sheet lined with foil. Roast for about 30 minutes till tender.
Remove from oven and let cool a few minutes before eating.
