Special Occasion Grilled Cheese

I call this special occasion grilled cheese because you’re likely not going to whip this up for your toddlers for lunch 3x a week but you can definitely make it for a simple dinner made to feel special and a bit fancy. I love this grilled cheese, especially dipped in tomato soup. I’ll post my tomato soup recipe later this week. If you feel like making bread for this recipe, this super easy bread is a great one!

Special Occasion Grilled Cheese

Super cheesy and melted perfectly with a combination of 4 kinds of cheese. This recipe will surely make your grilled cheese game fancy!

Ingredients

4 oz cream cheese (I like using an herb-y one), softened

4 oz cheddar cheese, shredded

4 oz gouda cheese, shredded

4 oz pepper jack cheese, shredded

1 loaf of artisan bread with a crunchy crust, sliced.

Softened butter for buttering 1 side of each slice of bread

Instructions

With a spoon, mix the cream cheese till smooth. Add the shredded cheeses and stir till crumbly. Butter 1 side of each slice of bread. Put about 1/5 of the mixture on the un-buttered side of the bread and top with another slice of bread, butter side up. Place in a skillet over low heat and cook each side about 3-4 minutes until golden brown. Serve Immediately.

Notes

You can use any kinds of cheese you like for your shredded cheeses, as long as they aren’t super hard cheeses. Cheese that melts well will make this sandwich as incredible as it can be.

Low heat is key for making a good grilled cheese. If you have the heat too high your bread will brown before the cheese is melted enough in the middle.

I never knew a grilled cheese could get better than just normal butter cheese and bread till this recipe! So easy and makes a super fancy grilled cheese! Definitely will make this again.
