The Best Baked Salmon
We have a tradition of having salmon for Christmas Dinner. This is the recipe I typically make. It’s tender and flavorful and a recipe you will make again and again. I’ve made more salmon living in Finland than I think I ever have in all my years of cooking combined. I love how fresh it is and how affordable it is compared to prices where I’m from too. I’m going to miss it when we move back.

Ingredients
1 ½–2 pounds of salmon filets
1/3 cup olive oil
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup chicken or seafood broth
3–4 cloves of garlic, finely minced
½ teaspoon lemon pepper
1/8 teaspoon cayenne pepper
Juice of 1 lemon
Slices of lemon
Instructions
In a large plastic bag combine all marinade ingredients except salmon till sugar is dissolved and ingredients are well combined. Add the salmon in and marinade for 30 minutes to 1 hour max.
Preheat oven to 400F. Prepare a rimmed baking sheet with foil and spray with cooking spray.
Remove salmon from marinade and place on prepared baking sheet. Drizzle a tablespoon or 2 of the marinade on top and then place several slices of lemon on top of the salmon and cover with another piece of foil.
Bake for about 15 minutes, depending on thickness of the filet. Don’t over-bake.
Notes
Don’t marinade salmon for more than an hour or it’ll be tougher and may fall apart when baking.
