Packed full of healthy ingredients that are perfect for starting your day. Raw vegan bar that are easy to make and still tastes delicious.
3 tablespoons whole almonds
1 cup dates, pitts removed
1/4 cup coconut oil
2 tablespoons almond milk (or soy or coconut milk)
1 tablespoon vanilla
1/4 teaspoon sea salt
3 cups old fashioned oats
1 cup cooked plain quinoa
6–8 oz dark chocolate, chopped into small chunks (or 1 cup mini chocolate chips)
about 2 oz more melted chocolate for drizzling on top
line a 9×13 pan with parchment paper and set aside.
In a food processor, pulse the almonds till they are really small. Remove to a small bowl and set aside.
In the food processor, combine the dates, coconut oil, almond milk, and vanilla. Process for several minutes (like 4-5 ish) till the mixture is super creamy and warm.
In a large mixing bowl combine the oats and quinoa. Pour the warm date mixture in and mix till combined. It will be hard to stir at first but it will come together. Add the chocolate in and stir to combine.
Press the mixture into the pan and press to evenly distribute the oat bars. Drizzle with more chocolate and put in fridge for several hours. Cut into squares to serve. You can eat these room temp but I prefer them from the fridge.
I personally think these are more of a breakfast bar, but you could also eat them for dessert if you don’t prefer overly sweet desserts.
