Browned butter alfredo sauce is really great all-purpose alfredo sauce to have on hand for pastas, white sauce pizzas, dipping breadsticks in, etc.
6 tablespoons butter
2 cloves of garlic, finely minced
2 cups heavy cream
1/8 teaspoon pepper
1 1/2 teaspoon salt, plus more to taste
1 cup Parmesan cheese
Melt the butter in a pot over medium heat and cook till it is browned lightly, about 4 minutes, stirring frequently. Quickly toss the garlic in and cook an additional 15-20 seconds or until the garlic is fragrant and the butter is fully browned. Pour the heavy cream in with the salt and pepper and whisk very frequently till the mixture reduces by about 1/3, about 7-10 minutes. Add the grated parmesan cheese and mix till cheese is melted and sauce is smooth.
This makes enough sauce to serve over 1 pound of pasta.
You can skip browning the butter and just make this as a normal alfredo sauce too.
Mix in a warmed peas or cooked chicken breast or even crumbled bacon for a more complete meal.
