Browned Butter Alfredo Sauce

I fell in love with browned butter, although I didn’t know it at the time, when eating at Old Spaghetti Factory as a kid. Their browned butter mizithra cheese pasta is what dreams are made of. I could eat that every week and not get sick of it. Since I grew up and found out that making browned butter adds soooooooo much flavor to so many things, I’ve attempted to put it in basically anything I can think of that uses just normal melted butter. And almost always It’s worth the extra 4 minutes of cooking time. But of course, this recipe would work if you don’t brown the butter too. This is a really great all-purpose alfredo sauce to have on hand for pastas, white sauce pizzas, dipping these breadsticks in, etc.

Browned Butter Alfredo Sauce

Browned butter alfredo sauce is really great all-purpose alfredo sauce to have on hand for pastas, white sauce pizzas, dipping breadsticks in, etc.

  • Prep Time: 5 minutes
  • Cook Time: 13 minutes
  • Total Time: 18 minutes
  • Yield: Enough to serve over a pound of pasta

Ingredients

Scale

6 tablespoons butter

2 cloves of garlic, finely minced

2 cups heavy cream

1/8 teaspoon pepper

1 1/2 teaspoon salt, plus more to taste

1 cup Parmesan cheese

Instructions

Melt the butter in a pot over medium heat and cook till it is browned lightly, about 4 minutes, stirring frequently. Quickly toss the garlic in and cook an additional 15-20 seconds or until the garlic is fragrant and the butter is fully browned. Pour the heavy cream in with the salt and pepper and whisk very frequently till the mixture reduces by about 1/3, about 7-10 minutes. Add the grated parmesan cheese and mix till cheese is melted and sauce is smooth.

 

This makes enough sauce to serve over 1 pound of pasta.

Notes

You can skip browning the butter and just make this as a normal alfredo sauce too.

Mix in a warmed peas or cooked chicken breast or even crumbled bacon for a more complete meal.

After trying many homemade Alfredo recipes, this has becomes our go-to! What I like about this recipe is it doesn’t separate as much as others I have tried when re-heating! It’s the perfect balance of being indulgent without being TOO rich! It’s our favorite Alfredo! We often half the recipe and it always turns out perfect

WOW! I had no idea you could brown butter for an Alfredo sauce. This is so good! I don’t know that I can go back to a jar of Alfredo sauce ever again!
