Browned Butter Pear and Apple Crisp

October 17, 2019Brianna

I made this recipe up because I had a big bag of ripe pears and needed to use them before they went bad. I didn’t quite have enough to make an entire crisp but luckily, I had a few small apples that equaled just the right amount of fruit. If you haven’t ever browned butter for anything I can’t recommend it enough. It is delicious on pasta, it is delicious basically in any baked good, and it is the perfect element to make your pear apple crisp that much better!

For Fruit:

2 pounds of pears (peeled, cored, and sliced into 1/3 inch slices)

2 small apples (peeled, cored, and sliced into 1/3 inch slices)

A few squeezes of fresh lemon juice

¼ cup sugar

1.5 Tablespoons corn starch

1 teaspoon cinnamon

Pinch of nutmeg

For Topping:

2/3 cup oats (instant or old fashioned will both work)

1/3 cup flour

½ cup brown sugar, packed

½ teaspoon salt

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

5 tablespoons melted and browned butter*

Instructions

Preheat oven to 375 F.

Spray a 9×9 or 10×10 baking dish with non-stick spray and set aside.

In a medium mixing bowl add the peeled, cored, and sliced pears and apples. Take a lemon cut in half and squeeze a few times over the fruit. Mix gently till fruit is coated in the lemon juice.

Add the sugar, corn starch, cinnamon and nutmeg to a small bowl. Stir together and then sprinkle over the fruit. Gently stir the fruit till evenly coated in sugar and corn starch mixture.

Pour fruit into prepared baking dish and set aside.

Using a small bowl add the oats, flour, brown sugar, salt, baking soda and powder, and cinnamon. Mix together.

In a small sauce pan, melt butter and cook on medium heat till the butter starts to foam then brown and get a few speckles. Remove from heat and pour over the oat mixture. Stir till butter is incorporated and sprinkle over the fruit.

Bake for 30-45 minutes until fruit is soft and topping is golden brown.

Let cool for 10-15 minutes before serving.

Notes

You don’t have to brown the butter but it is delicious if you do.

Scooping a dollop of vanilla ice cream on top is always a good idea.
