Chocolate Almond Banana Muffins
This recipe for chocolate almond banana muffins is a pretty solid recipe for using up those brown bananas you forgot about or your kids never ate. If you know me you know I HATE bananas. They are the nastiest things in allll forms except banana bread. I don’t know why banana bread is okay, but I’m glad I like at least something that has bananas in it.

Ingredients
½ cup butter, softened
1 ¼ cups sugar
2 eggs
1 cup mashed bananas (I use about 2 average to large ish sized bananas)
¼ cup buttermilk
½ teaspoon vanilla
½ teaspoon almond extract
1 ¾ cups flour
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon baking soda
Instructions
Preheat oven to 350 F (or 325 F if cooking in a bread pan)
Grease a muffin tin well (or 1 normal size bread loaf pan). This batter will stick if you don’t grease well. flouring and greasing never hurts.
In a medium bowl, cream butter and sugar together. Add eggs, bananas, buttermilk and vanilla until the batter is well mixed. In a separate bowl combine the flour, baking powder, salt and soda. Mix until just combined. Pour batter into prepared pan and bake at 350 degrees for around 14-16 minutes or until a toothpick comes out with a few moist crumbs. If making a loaf instead of muffins cook for 60 minutes until a toothpick comes out with a few moist crumbs.
