Honey Dill Roasted Carrots

My mother in law makes honey dill carrots with steamed carrots but I’m kind of on an oven-roasted veggie kick lately so I decided to try the honey dill idea with oven roasted carrots. I think this will be an easy side dish you and your family are sure to enjoy. I also think this would be a great side you can bring to thanksgiving.

Honey Dill Roasted Carrots

Perfectly roasted carrots in a delicious honey dill glaze.

  • Prep Time: 5 minutes
  • Cook Time: 25 minutes
  • Total Time: 30 minutes
  • Yield: roughly 6 side portions 1x

Ingredients

Scale

2 pounds baby carrots, or large carrots peeled and cut into 12 inch pieces.

1/3 cup butter

3 tablespoons honey

¼ teaspoon salt

Pinch of black pepper

1 tsp dry dill

Instructions

Preheat oven to 425 F.

Melt butter in pan with honey over medium heat.

Add the salt, pepper, dill and carrots and stir to combine.

Cook for about 3-4 minutes and transfer to a foil lined baking sheet.

Bake for 20 minutes, or until tender, stirring about halfway through the bake time.

Remove from oven and allow to cool for 5-10 minutes before eating.
