Easy Pumpkin French Toast

This recipe is hardly any more hard than normal french toast but it is such a fun Fall breakfast. And if you have kids, they’ll think it is fun that it’s orange. With Halloween now in less than a week it’s the perfect time to make it!

I know french toast is a “breakfast food” but 9 times out of 10, when I make french toast it’s for dinner. I am doing this thing where once a week one of my girls (who are 7 and 4.5 years old) get to choose dinner and be my dinner helper. It rotates every other week so they each get to pick a meal and help every 2 weeks. Kids are way more capable than we sometimes give them credit for. Granted, my girls have been helping in the kitchen for a long time now, but they can use real kitchen knives now and my 4 year old can chop a lot of things very proficiently. It’s been one of the better parent ideas I’ve had and this is definitely a recipe your kids could help with. Both of my girls love choosing pancakes or french toast because they think using a spatula to flip them over is the funnest thing ever. I also love my kitchen helper idea because it is seriously so much easier to cook or bake with kids when it’s not multiple kids trying to help and fighting over fairness of who got to do what or whose turn it is next. My girls know that when it’s their night they are the only helper which makes them feel special and it has alleviated so much arguing. I get to teach them new skills and it’s fun mommy daughter time. When my 1.5 year gets old enough He’ll definitely be added to the rotation. If you like this idea, try it out and let me know if you’re finding success like I am!

Perfectly tender french toast with a fun fall twist.

• Cook Time: 15 minutes
• Total Time: 25 mintues
• Yield: about 18 pieces 1x

Ingredients

Scale 1x2x3x

6 eggs

1 cup milk

3/4 cup pumpkin puree

2 teaspoons cinnamon

1 teaspoon pumpkin pie spice

1/2 cup sugar

1 large loaf of bread (brioche, challah, texas toast, or thick cut french bread)

Cook Mode Prevent your screen from going dark

Instructions

Whisk together all the ingredients (minus the bread) till the sugar is dissolved.

Heat a skillet or pan on the stove over medium heat. Cook each side for about a minute. If the toast cooks too fast, lower it a little bit. You don’t want to cook it too fast or the pumpkin won’t taste very good.

Serve with real maple syrup or buttermilk syrup.
