Ultimate Asian Salad
The dressing on this ultimate asian salad is the greatest combination of asian flavors ever! It has peanut, sesame, soy, ginger, orange, etc, etc, etc. There are so many different vegetables in the salad as well. It feeds at least 12 as a side so make sure you halve it if you’re feeding just your family. It’s a great salad to bring to a potluck type dinner too.

Ingredients
Salad-
3 cups shredded cabbage
1 cup matchstick carrots
3 cups red cabbage
4 green onions, white and light green parts chopped
1 small red pepper, sliced thin and chopped into 1-inch pieces
4 cups of chopped romaine lettuce
2 cups frozen edamame, thawed
¼ cup chopped cilantro
1 can mandarin oranges, save juice
1 package of Ramen noodles, broken into small chunks, uncooked
Dressing-
3 tablespoons low sodium soy sauce
¼ cup rice vinegar
2 tablespoons sesame oil
3 tablespoons juice from mandarin orange can
2 tablespoons olive oil
2 tablespoon creamy peanut butter
1 tablespoon minced ginger (or ginger paste)
Instructions
In a large mixing bowl combined the salad ingredients minus the ramen noodles.
In a small mixing bowl combine the dressing ingredients and whisk till well combined.
Pour the dressing over the salad ingredients and toss to combine. When ready to serve, sprinkle the ramen noodles over the salad and toss to combine.
Notes
This salad is definitely the best on the day it’s made.
Makes a lot, definitely can halve it if you’re not feeding a lot of people.
Add some grilled chicken and make it a full meal!
I’ve made a similar version for years but definitely want to try this recipe! Looks and sounds delicious!
This salad was so good! I made a bunch of individual salads for lunch this week and I’m already looking forward to my next lunch of it. I used chow mein noodles instead of the ramen. The dressing was amazing! I of course forgot to save the liquid from the mandarin oranges so I added some maple syrup instead. It was delicious!
