Cute little roasted potatoes that everyone will love to eat and that pair great with almost any main dish.
1 ½ pounds fingerling potatoes
3–4 cloves garlic finely minced
2 tablespoons melted butter
2 tablespoons olive oil
½ tsp salt
¼ teaspoon pepper
½ teaspoon herbs de Provence
Light squeeze lemon juice
Preheat oven to 400F. Prepare a rimmed baking sheet with foil and lightly spray with cooking spray. Wash and scrub potatoes and put in a medium bowl. Pour remaining ingredients over potatoes and toss to combine. Pour onto prepared baking sheet and bake for 25-30 minutes, depending on potato size, till fork tender.
