Southwest Quesadillas (with delicious avocado dipping sauce!)
Southwest quesadillas are an easier to make at home version of the deep fried southwest egg rolls you can buy as an appetizer at Chile’s Restaurant. There is no deep frying, no egg roll wrappers but all the flavor! Perfectly seasoned mix of filling with melty cheese in a slightly crisp tortilla with the most delicious dip! For an even more delicious southwest quesadilla, try making my perfect handmade tortillas! I have a hard time eating store bought tortillas because they are so so good and not too difficult to make.

Ingredients
Quesadillas-
1/4 red pepper, diced small
1/4 cup yellow pepper, diced small
2 tablespoons canned jalapeños, diced small
3/4 teaspoon cumin
3/4 teaspoon chili powder
1/4 teaspoon onion powder
1/4 teaspoon salt
2 cups cooked chicken breasts, cubed small
1/2 cup canned and drained corn
3/4 cup black beans
1 tablespoon chopped cilantro
1/3 cup green onion chopped small, white and light green parts
Squeeze of lime juice
2–3 cups Cheddar or Monterey jack Cheese
8 tortillas
Avocado Dip-
1 small ripe avocado, smashed
1/4 cup mayo
1/4 cup sour cream
1/4 cup cream cheese
2 tablespoons cilantro, chopped small
1/8 teaspoon onion powder
¼ teaspoon salt
1 tablespoon lime juice
Instructions
Quesadillas-
Combine the red pepper, yellow pepper, jalapenos, cumin, chili powder, onion powder, and salt in skillet. Cook for 4-5 minutes till peppers are soft. Add in the cooked chicken breasts, corn, and beans and heat for a few minutes. Sprinkle in the cilantro and green onion and squeeze a lime over. Mix to combine and set aside.
Heat a large skillet on medium low till heated and place a tortilla on it. Sprinkle a generous handful of cheese on top of the tortilla and then scoop a generous amount of the chicken mixture on top and spread evenly. Sprinkle another handful off cheese on top of the chicken mixture and place a second tortilla on top. Don’t cook too fast or you’ll burn the tortilla before the cheese is melted. Feel free to cover the pan with a lid to help the cheese melt a bit faster. Flip over after 2-3 minutes and cook the other side till the cheese is melted all the way through. Repeat the process till all the meat mixture and tortillas is gone.
Avocado Dip-
combine all the ingredients in a small mixing bowl. Refrigerate covered well till ready to serve.
