Sweet Potato Mash- Savory

I saw on an episode of MasterChef once where a contestant made sweet potato mashed potatoes and made a mental note to make them one day. I originally set out to make a sweet, sweet potato mash but in the moment, I was in a savory mood so I decided to try that out instead first. When I think of Thanksgiving sweet potatoes I think of a sweet dish but when I eat sweet potato fries I always want to dip them in ranch or a garlic aioli. So this recipe is kind of a play on the flavors of a sweet potato fry dipped in a savory sauce. This recipe is soooo easy. And so delicious!

Sweet Potato Mash- Savory

A play on a sweet potato fry dipped in a savory garlic sauce.

  • Prep Time: 10 minutes
  • Cook Time: 25 minutes
  • Total Time: 35 minutes
  • Yield: 8-10 side servings 1x

Ingredients

Scale

2/3 cup of butter

4 cloves of garlic, minced

½ teaspoon thyme

½ teaspoon rosemary

2/3 cup of water

5 pounds sweet potatoes, peeled, cut in half long ways and then sliced into ~1/8 inch slices

2 teaspoons salt

1 teaspoon pepper

½ cup sour cream

Instructions

In a soup pot, melt butter over medium heat and then add the garlic, thyme, and rosemary. Saute for 3-4 minutes until fragrant and garlic is just barely starting to brown. Add water, sweet potatoes, salt, and pepper. Cover with lid and simmer over medium to medium low heat for about 20-25 minutes, stirring every 4-5 minutes. When the sweet potatoes are easy to mash with the spoon you’re stirring them with, remove from heat and dollop in the sour cream. Using a hand mixer, mix potatoes till smooth. Serve warm.
