Tons of asian flavor and vegetables all in 1 ultimate asian salad!
Salad-
3 cups shredded cabbage
1 cup matchstick carrots
3 cups red cabbage
4 green onions, white and light green parts chopped
1 small red pepper, sliced thin and chopped into 1-inch pieces
4 cups of chopped romaine lettuce
2 cups frozen edamame, thawed
¼ cup chopped cilantro
1 can mandarin oranges, save juice
1 package of Ramen noodles, broken into small chunks, uncooked
Dressing-
3 tablespoons low sodium soy sauce
¼ cup rice vinegar
2 tablespoons sesame oil
3 tablespoons juice from mandarin orange can
2 tablespoons olive oil
2 tablespoon creamy peanut butter
1 tablespoon minced ginger (or ginger paste)
In a large mixing bowl combined the salad ingredients minus the ramen noodles.
In a small mixing bowl combine the dressing ingredients and whisk till well combined.
Pour the dressing over the salad ingredients and toss to combine. When ready to serve, sprinkle the ramen noodles over the salad and toss to combine.
This salad is definitely the best on the day it’s made.
Makes a lot, definitely can halve it if you’re not feeding a lot of people.
Add some grilled chicken and make it a full meal!
