My mom made these for us growing up but she used can biscuits instead of homemade ones. Feel free to do that if you’d like to make this quicker and easier. I prefer the taste of homemade biscuits and haven’t bought a can of biscuits from the store in years! So if you have 5 minutes extra time I definitely recommend the homemade route.

I think this meal is delicious and should be made by all. It’s a fun kid-friendly meal too. A huge bonus in my home where my 3 year old seems to think I only make food that will torture her.

Bar-Be-Cups

Delicious and fun way to serve dinner to your kids.

Ingredients

Bar-be-cups-

1 pound lean ground beef

1 medium onion, diced small

¼ tsp pepper

¼ tsp salt

1/8 tsp cayenne pepper

¼ tsp garlic powder

½ cup BBQ sauce

2 Tablespoons ketchup

1 cup of frozen peas

Apx ¾ cup of shredded cheddar cheese, for topping

Biscuits-

2 ¾ cups flour

1 ½ tsp salt

½ Tablespoon Sugar

1 teaspoon baking powder

1 tsp baking soda

6 tablespoons cold butter

¾ cup cold buttermilk

¼ cup milk

1 egg

Instructions

Preheat oven to 375 F.

For the meat mixture-

Dice onion into small pieces. Place ground beef and onions into a frying pan and cook till meat is cooked through. Drain excess fat from meat and return to pan. Add seasonings, frozen peas, BBQ sauce and ketchup. Stir to combine.

 

For the biscuits-

In a medium mixing bowl whisk together the flour, salt, sugar, baking powder and baking soda. Cut in the butter with a pastry blender (or a few pulses in a food processor) till the butter is in small pieces. In a separate small bowl combine the buttermilk, milk, and egg. Make a well in the center of the dry ingredients and add in the milk mixture. Stir till just barely combined. It will still be lumpy.

 

Assembly-

Spray a muffin tin well with cooking spray. Place a scoop of biscuit dough in each hole and press up the sides and make a cup out of the dough. This is a sticky process and isn’t super pretty looking at this point. Don’t worry, it will turn out. Fill the dough cups with the meat mixture and place in the oven for 7 minutes. Remove from oven, top with shredded cheese, and return to oven for another 5-7 minutes, or until biscuits are golden brown.

Notes

Serve with BBQ sauce or ketchup for dipping.

Makes 12 cups.

SO GOOD! The biscuit dough is sticky so I was worried It wouldn’t work, but it turned out just great! Super simple.
