Chili Lime Chicken and Sweet Potato Tacos
These chili Lime chicken and sweet potato tacos are a huge hit in my home. The sweetness of the sweet potatoes mixed with the heat of chili pepper, the acidity of the lime juice, combined with all the textures and flavors of the rest of the taco mix is perfection. I recommend using hard taco shells for this because the softness of the sweet potatoes is a bit lost in a soft tortilla.

Ingredients
2 tablespoons olive oil
16–20 oz chicken breasts cut into 1 inch pieces
Salt and pepper
4 cups sweet potatoes, cut into 1/2 inch cubes
2 bell peppers (whatever color) chopped in 1/2 inch pieces.
1/2 a large red onion, diced small
1– 1 1/2 tablespoons chili powder (depending on how spicy you want it)
2 teaspoons ground cumin
1/4 teaspoon salt
1 cup chicken broth
Zest of 1 lime
Juice of 1 lime
1 can black beans, drained and rinsed

Instructions
In a large skillet, heat oil over medium heat and add the chicken. Lightly salt and pepper the chicken. Heat till chicken is cooked through, about 8 minutes. Remove chicken to a clean plate or bowl.
Add to the now empty skillet the sweet potatoes, bell peppers, red onion, chili powder, cumin, salt, chicken broth, and lime zest. Cover and bring to a simmer and cook for about 10 minutes, stirring every 4-5 minutes. Uncover and cook till sweet potatoes are really soft and the moisture is mostly gone.
Add the Lime juice, black beans and chicken and cook till heated through, about 2 minutes.
Serve with fav taco toppings.
