Fresh Pico De Gallo
I love salsa. It was my number one pregnancy craving with my first baby. A fresh pico is delicious on a taco to make it feel brighter and fresher. It’s super easy to make and far more cost effective than buying pico at the store. If you make this with fresh garden tomatoes it’s even better! I’m drooling just thinking about how delicious it is.

Ingredients
4 Roma tomatoes, diced into small cubes
¼ cup finely chopped red onion
1–2 jalapenos, seeds and stem removed and chopped finely
4 Tablespoons chopped cilantro
½ lime, juiced
½ teaspoon salt, plus more to taste
Instructions
Chop tomatoes into small cubes, dice onion into small pieces and add to a small mixing bowl.
Remove seeds and stems from 1-2 jalapeños (depending on how spicy you want it) and dice small and add to bowl.
Roughly chop 4 tablespoons of cilantro and add to bowl.
Squeeze half a lime over salsa and sprinkle with salt. Stir to combine.
Notes
I think this tastes even better 24 hours after being made but it rarely lasts that long in my home.
