Since Pie is the best part of Thanksgiving to me, I asked my husband this year what kind of pies I should make for my website. He told me he thought I should try to make an oatmeal cream pie cookie into a pie. So I set off to see if this even exists on the internet and it does not. So I thought I’d try to make one. After many attempts, many fails, and frustration over it and my husband telling me it was fine and he didn’t need this kind of pie, I finally got a good pie. It’s really delicious and if you like oatmeal at all, you’re going to love this pie.

A delicious oatmeal cream pie cookie but in pie form. Delicious oatmeal pie topped with marshmallow whipped cream.

Ingredients
Pie-
1 unbaked pie shell (9-inch pie plate)
1 1/4 cup dark brown sugar (248 g)
1 cup old fashioned oats (90 g)
1/2 cup white sugar (100 g)
1/2 teaspoon salt
3 large eggs, lightly beaten
1/4 cup buttermilk
1/2 cup milk (any percentage fat should do except skim)
3 tablespoons butter, melted and cooled to room temperature
2 teaspoons vanilla extract
Marshmallow whipped cream-
3/4 cup heavy cream
1, 7oz jar marshmallow fluff
Instructions
Pie-
Preheat oven to 350 F. Line a 9-inch pie plate with a pie crust and place in fridge.
In a medium mixing bowl combine the brown sugar, oats, white sugar, and salt.
In another medium mixing bowl, beat the eggs buttermilk, milk, butter, and vanilla extract.
Pour the wet ingredients into the bowl of dry ingredients and mix till well combined. Pour into prepared pie plate and bake for 45-55 minutes, till pie is set and cooked through. Let cool at least 45 minutes before serving. Serve warm or cold.
Marshmallow whipped cream-
Whip the heavy cream till soft peaks. Add the marshmallow fluff and beat till smooth. Refrigerate till serving.
Dollop on pie slices when ready to serve.
Notes
If you’re worried about a potential unbaked crust on the bottom, blind bake your pie crust for about 20 minutes then add the filling and bake the pie till pie is done.
If you notice the crust of your pie getting too dark, tent with foil.
