The Best Chicken Salad
I’ve been making this chicken salad for over 5 years now and I personally think it’s the best out there. This is an elevated chicken salad that is bursting with textures and flavors. We love doing family picnics and though my family would all be fine with PB&J’s on the picnic, I much prefer to make this. I know summer is over now and I should have posted this a few months ago, but hopefully it’ll still grace your dinner table or picnic blanket sometime! It makes enough to feed quite a few people so halve it if you don’t want leftovers.

Ingredients
3/4 cup mayonnaise
1/2 cup sour cream
2 tablespoons apple cider vinegar
¼ tsp salt
pinch of pepper
1 tablespoon sugar
4 ribs of celery, chopped
3 green onions, chopped
2 small apples, peeled and cut into small chunks (or 1 apple and ½ cup halved grapes)
1/2 cup dried cranberries
1.5–2 pounds of chicken breasts, cooked, cooled, and cubed (about 3.5–4 cups)
Optional- ¼ cup roughly chopped cashews
Instructions
In a medium mixing bowl whisk together the mayo, sour cream, apple cider vinegar, salt, pepper, and sugar. Add the celery, green onions, apples (and grapes), dried cranberries and cooked chicken (and cashews, if using). Stir together and refrigerate till chilled.
Serve with crackers, croissants, on bread, or rolls.
Notes
I think this is best after sitting in the fridge for a full day.
