Chicken Ranch and Rice Bake
When my husband comes home from work and sees this in the oven he tells our 3-year-old how lucky she is to get this for dinner. He loves this. It’s so incredibly easy and fast to put together and Millie almost always eats it without complaining at all. It’s a real miracle because she hates eating, in general.

Quick and easy meal to put together that everyone in your family will eat.
Ingredients
1 cup mayo
1 cup sour cream or plain Greek yogurt
¼ cup cream cheese (optional, but delicious. I typically only add this if I have it on hand with no plan for using it)
1 ranch packet
¼ cup of milk
2 cloves of garlic, minced
¼ tsp pepper
½ teaspoon salt
2 cups shredded cheese
2 cups of frozen peas
1 pound of uncooked chicken breasts, cut into 1-inch pieces
Instructions
Preheat oven to 350 F.
In a mixing bowl whisk the mayo, sour cream, dry ranch seasoning, milk, garlic, and pepper. With a spoon mix in the cheese, peas and chicken.
Pour into a casserole dish and use a spoon to create an even layer so it cooks evenly. Sprinkle on a bit more cheese, if desired.
Bake uncovered for 45-60 minutes, or until chicken is cooked through.
Serve over rice and enjoy.
