Cinnamon Roll Coffee Cake
Today is my oldest’s first day of Kindergarten! How does time go by so quick?? I woke up in time this morning to make this Cinnamon Roll Breakfast Cake for her. I make this somewhat often because it’s my husband’s favorite childhood breakfast and just have been too out of it to photograph it and get it posted. One of my goals with getting back into a routine when school started was to start blogging consistently again too. I’m pretty happy with myself for getting a blog up today on the first day of school! This recipe is based off a recipe in my in-law family cookbook. I tweaked it a bit to make it more moist and, in my opinion, more delicious. It’s definitely easy to make and everyone is sure to enjoy it.

Delicious and easy breakfast cake that tastes like a cinnamon roll with way less work. Great for a special occasion or just a fun weekend breakfast.

Ingredients
Cake-
1/2 cup oil
2 eggs
1/2 cup buttermilk plus 2 tablespoons
1/2 cup milk
1 teaspoon vanilla
3 cups flour
1 1/2 cups sugar
1 teaspoon salt
4 teaspoons baking powder
Crumble-
3 tablespoons melted butter
2/3 cup brown sugar
1 tablespoon cinnamon
3 tablespoons flour
Drizzle-
2 cups powdered sugar
5 tablespoons milk
1 teaspoon vanilla extract
Instructions
Preheat oven to 375 F
Whisk together the oil, eggs, buttermilk, milk, and vanilla in a small bowl.
In a medium mixing bowl whisk together the flour, sugar, salt, and baking soda.
Add milk mixture to the dry ingredients and stir till a few dry streaks remain. Don’t over mix it.
In another small bowl combine the melted butter, brown sugar, cinnamon, and flour.
Grease a 9×13 pan. Pour the batter into the pan and sprinkle the crumble evenly over it. Use a toothpick to swirl the topping around a bit.
Bake for 2 about 25-30 minutes, till a toothpick comes out with a few moist crumbs on it.
While the coffee cake is baking, in a small bowl whisk together the powdered sugar, milk, and vanilla extract. When the cake comes out of the oven immediately drizzle evenly over the cake. Let cool for 10-15 minutes before serving.
Notes
This cake is also delicious without the glaze. If you want to be more calorie-conscious you can skip the glaze, no problem.
