Coconut Rice

Coconut rice is the perfect side dish to so many things. It’s just as easy as plain rice and tastes amazing. I originally came up with this coconut rice dish to serve with my Honey Lime Coconut Curry Chicken, and I 100% recommend making them together. Coconut Rice

Delicious and creamy coconut milk rice. Fluffy and perfectly flavored.

Ingredients

Rice-

2 cups long grain rice (rinsed really well)

1 teaspoon salt

1, 14-oz can coconut milk* see notes (1 3/4 cups)

1/4 cup plus 2 tablespoons water (or more coconut milk instead)

Instructions

Rinse the rice very well, until the water runs clear.

Add all the ingredients to the rice cooker and place the lid on it. Push the cook button and wait until the rice is done. Unplug or turn of the cooker and let the rice steam for about 5 minutes with the lid still on before serving.

If you’re making this with the Lime Coconut Curry Chicken make the rice with the leftover coconut milk from the marinade plus one more whole can. This equals 2 cups plus 2 tablespoons coconut milk.

I think this recipe works best with light coconut milk. Full fat coconut milk is a bit too thick. Add a few extra tablespoons water if you use full fat coconut milk.

Optional, sprinkle on coconut flakes after the Coconut Rice is cooked.

Frequently Asked Questions – Coconut Rice

I highly, highly suggest rinsing rice every time you cook it on its own. It is a game changer. If you have never done this, try it and you will never go back. If I had a Swag Shop on my website I'd have a shirt for sale that says, "Did you rinse your rice?". That and one that says, "Shred your own cheese!"
Yes, you can. Add an additional 1/4 cup water or coconut milk if you use brown rice.
Yes, definitely. I would recommend making it with all coconut milk though and no water as the coconut milk is a little thinner.
You can make the coconut rice on the stove the same way you would make regular rice on the stove. Rinse rice well. In a saucepan combine the rice, salt, coconut milk, and water. Heat the rice over medium heat until it starts to boil. Reduce heat to low, cover with a lid, and cook until all the liquid is gone. Remove from heat, keep lid on, and steam for about 5-10 minutes. Fluff with a fork and serve.
To make the rice in an Instant Pot add the rinsed rice to the Instant Pot along with the coconut milk, water, and salt. Push the rice button with the valve closed. Once the Instant Pot beeps and the rice is cooked, naturally release the pressure for 12 minutes before manually releasing the rest of the pressure. Fluff and serve.
