Coconut Rice
Coconut rice is the perfect side dish to so many things. It’s just as easy as plain rice and tastes amazing. I originally came up with this coconut rice dish to serve with my Honey Lime Coconut Curry Chicken, and I 100% recommend making them together. Delicious and creamy coconut milk rice. Fluffy and perfectly flavored.

Ingredients
Rice-
2 cups long grain rice (rinsed really well)
1 teaspoon salt
1, 14-oz can coconut milk* see notes (1 3/4 cups)
1/4 cup plus 2 tablespoons water (or more coconut milk instead)
Instructions
Rinse the rice very well, until the water runs clear.
Add all the ingredients to the rice cooker and place the lid on it. Push the cook button and wait until the rice is done. Unplug or turn of the cooker and let the rice steam for about 5 minutes with the lid still on before serving.

If you’re making this with the Lime Coconut Curry Chicken make the rice with the leftover coconut milk from the marinade plus one more whole can. This equals 2 cups plus 2 tablespoons coconut milk.
I think this recipe works best with light coconut milk. Full fat coconut milk is a bit too thick. Add a few extra tablespoons water if you use full fat coconut milk.
Optional, sprinkle on coconut flakes after the Coconut Rice is cooked.
