Garden Tomato Soup

Garden tomato season is coming up and I thought my garden tomato soup recipe would be perfect to share. We are attempting to grow a garden on our balcony and so far it’s doing much better than I ever thought it would be. I’m not a fan of plain tomato soup, so this tomato soup isn’t at all like a can of tomato soup you buy for $1 at the store. It has a lot of flavor and dimension to it that you’ll love. Make this grilled cheese to dip in it and you’ll have a delicious and filling meal! I hope some of your garden tomatoes get turned into this soup this summer.

Garden Tomato Soup

Not your average, plain, and boring tomato soup. Packed full of flavor and made even more delicious if you use tomatoes from your garden.

  • Yield: Serves 5-6 1x

Ingredients

1 tablespoon olive oil

1 large onion, diced small

5 cups chopped tomatoes (about 2 1/22 ¾ pounds)

2 cups chicken or vegetable broth

1 ½ teaspoon salt

½ teaspoon pepper

1 cup cream

½ cup basil pesto

Instructions

In a large skillet, heat olive oil over medium heat and add diced onion. Sauté till onions are soft, about 5 minutes. Reduce heat to medium low, add the chopped tomatoes and continue to sauté for an additional 5 minutes. Add broth, salt, and pepper and bring to a simmer. Simmer for 15 minutes and then add cream and pesto and stir till combined. Blend the soup in a blender, ½ at a time to not overflow the blender. Return the soup to the pot and stir together. Serve hot.
