Garlic Red Mashed Potatoes
Perfect garlic red mashed potatoes are a classic side to basically any main dish! This recipe will make you feel like you’re eating at a steakhouse.
- Prep Time: 15 minutes
- Cook Time: 20 minutes
- Total Time: 35 minutes
- Yield: serves at least 8
Ingredients
3 tablespoons salt for salting the water
4–5 pounds red potatoes, washed but not peeled, chopped into 2–3 inch chunks
5 cloves garlic, whole
4 oz cream cheese, softened
2/3 cup butter, softened
½ cup buttermilk
Salt and pepper to taste
Instructions
Salt a large pot of cold water with 3 tablespoons salt. Add the chopped potatoes, cover and boil over high heat. Once the water reaches a boil, lower heat to medium and cook for 15 minutes or until the potatoes are fork tender. Drain the potatoes well and return to the pot. Add the cream cheese, butter, and buttermilk and use an electric mixer to mix till mostly creamy. I think these potatoes are better with a bit of chunks in them. Taste and see if they need any more salt before adding the salt. Sometimes the salt in the water will lend to the potatoes being perfectly salted.
Notes
If you add potatoes for making mashed potatoes (any kind!!) to already boiling water you will get water-logged potatoes. The outside will be cooked more than the middle and you’ll have way too much moisture in your final mashed potatoes.
