Loaded Summer Salad
I’m on a veggie kick because it’s the season of delicious in-season veggies and this loaded summer salad is perfect! I sometimes base my meals for the week based on the produce that’s on sale at the grocery store. Is this weird or do you do this too? I really love this dressing and combination of all the veggies I put in it. Olives, in my opinion make a salad soooo good. Ingredients
Dressing-
1 cup mayo
½ cup BBQ sauce
2 Tablespoons Dijon Mustard
1 Tablespoon honey
2 Tablespoons Worcestershire Sauce
2 Tablespoons Lime Juice
Ideas for salad-
Chopped greens- Romaine is my preference for this salad
Black beans
Corn, canned or frozen corn that’s been thawed
Cherry tomatoes
Crumbled bacon
Shredded or cubed chicken
Cheddar cheese, shredded
Bell peppers, chopped small
Cucumber, chopped small
Black Olives, sliced
Avocados, sliced
Jalapenos, diced small
Cilantro, chopped
Red onion, diced small
Instructions
In a small bowl, whisk ingredients together till combined. Refrigerate till ready to serve.
Put greens in a bowl for each person and load with desired toppings. For the most delicious and fully loaded salad, try all the ingredients.
Notes
With small kids, they hardly ever eat a real mixed salad. Instead we put pieces of the salad on the plate and let them dip their deconstructed salad in the dressing. I like salads because everyone can pick and choose what they like to customize their perfect salad.
