Chocolate Chunk Muffins

Delicious, tender, and moist chocolate muffins with lots of chocolate chunks. Tastes as good as a delicious bakery muffin with impressive size muffin tops!

Ingredients

1 2/3 cup flour (210 g)

3/4 cup cocoa powder (60 g), sifted

1/2 teaspoon baking soda

2 teaspoon baking powder

1/2 teaspoon salt

2 1/2 cups chocolate chunks (cut chocolate bars up so there’s some small and larger chunks)

1 cup sugar (210 g)

1/3 cup vegetable oil

2 large eggs plus 1 egg yolk

1 tablespoon vanilla extract

3/4 cup sour cream, room temperature

1/2 cup hot water

Instructions

Preheat oven to 375 F and line a muffin tin with cupcake liners.

In a medium mixing bowl combine the flour, cocoa powder, baking soda, baking powder, and salt, and chocolate chunks

In a large mixing bowl, using a handheld mixer combine the sugar, vegetable oil, eggs, and vanilla till mixed thoroughly. Add in the sour cream and mix till combined. While whisking, slowly add in the hot water.

Using a wooden spoon stir the dry ingredients into the wet ingredients just till no streaks remain. Don’t over mix.

Fill each muffin liner almost all the way to the top.

Bake for 25-30 minutes till an inserted toothpick comes out with a few moist crumbs on it.

Let cool for about 5 minutes before removing muffins to a wire cooling rack.
