Strawberry Crumble Pie
This delicious crumble only takes about 5-10 minutes to put together! Here in Finland, strawberries are in full season and they are the most delicious in the whole world. At least, the most delicious strawberries I have ever tasted. People say it’s because there is so much light here in the summer (like 19-20 hours of light every day!),o the berries get extra sweet. But because it doesn’t get hot here (hello only 75 F max temps, typically!) the berries are super small. They’re little balls of candy, practically. If you ever find yourself in Finland in the summer, buy the Finnish strawberries. Don’t skimp and buy the cheaper strawberries that come from Spain, buy the Finnish ones. They’re so worth it!
Every summer we’ve been here we’ve bought a 5 kilo (11 pounds) flat of them and make freezer jam for the year and also a double or triple batch of my Strawberry syrup. This year I decided to try to make a new strawberry dessert and the strawberry crumble pie was born. Ingredients
1 pound of strawberries, washed dried and stems removed (or enough to cover the bottom of a 9 inch pie crust, single layer)
3/4 cup oats
3/4 cup flour
Pinch of salt
6 tablespoons of sugar
6 tablespoons butter, melted
1/2 teaspoon vanilla extract
Instructions
Preheat oven to 350 F.
If the berries are really large, cut them into roughly 1-inch chunks. Don’t cut them too small. Lay the strawberries in a single layer on the bottom of a 9-inch pie plate.
In a medium mixing bowl combine the oats, flour, salt, and sugar. Pour the melted butter and vanilla extract over the dry ingredients and mix till crumbly. Spread the crumble evenly over the strawberries. Bake for about 25-35 minutes or until crumble is browning and strawberries are bubbling.
Serve warm and with ice cream, a splash of fresh cream, or a dollop of whipped cream.
Notes
Eat leftovers for breakfast! The oats soak up the strawberry juice and it becomes like an amazing overnight oats bowl.
