Killer Potato Salad
This is my former roommate, Whitney’s, recipe. She called it killer potato salad because it has a pound of bacon in it so it will probably kill you. This is my favorite potato salad and so insanely fast and easy to make. I prefer eating this cold but if you typically prefer a hot potato salad then you’ll enjoy this warm. Don’t overcook your potatoes or your salad will turn to mush.

- Yield: Serves at least 12 as a side
Ingredients
3 1/2 to 4 pounds red potatoes
1 pound bacon
1 cup mayonnaise
3 tablespoons white vinegar
4 teaspoons chicken bouillon
1/2 cup hot water
Instructions
Preheat oven to 350 F.
Bake potatoes with skins on for 1 hour until cooked but not mushy. Dice potatoes.
Fry bacon until crispy. Drain grease and crumble bacon over potatoes. In a separate bowl, mix bouillon and hot water. Add to mayonnaise and vinegar; stir until well blended. Pour over potatoes and bacon. Serve warm or cold.
Notes
I like the potatoes on the crunchier side, but you can cook them to your own preference. Just make sure they aren’t mushy.
You can substitute turkey bacon in an attempt to be healthier, but it has more flavor with real bacon, obviously.
